For those of you who feel like you’ve exhausted all your
green bean variations, here is a new idea that you can make in less than 30 minutes.
All you need is three major
ingredients: leek, green
beans, and cauliflower rice.
Ingredients:
1lb/500gr fresh green beans
1lb/500gr cauliflower rice
2 leeks
3 tbsp oil
Salt and pepper
1 tbsp chopped fresh dill - optional
Preparation:
Remove ends and green part of leeks. Slice each leek in half,
then chop each half into thin half circles.
Over medium high heat add oil, chopped leeks, and salt & pepper to a wide pan that has a
lid. Sauté for about 4-5 minutes.
Remove ends of green beans then cut into thirds.
Add green
beans to the leeks in the pan and mix. Let cook for 5 minutes, stir and continue
to cook for another 5 minutes.
Add cauliflower rice to the pan and mix well with the leeks and
green beans. Add more salt and pepper if needed. Cover pan with lid and cook
for about 10 minutes, mixing from time to time.
Turn off heat. Remove lid and add chopped dill, mix and
serve.
