Halibut with Za’atar

Making good food doesn’t have to be complicated or take a long time. In this recipe I use only two specific ingredients: Halibut and Za’atar, the rest of the ingredients: oil, salt, and pepper, are basic ingredients that can be found in almost any kitchen.  Preparation time from start to finish is very fast - only 15 minutes.  Halibut is a light white fish with a very mild flavor. I prefer using a thin slice of Halibut instead of a thick one, this offers more surface area to absorb the flavors that I add. Grilling or broiling is my favorite cooking method for fish and vegetables. It’s fast, and in my opinion it emphasizes the natural flavor of the food. Here I chose to use za’atar to flavor the fish. Za’atar is a Middle Eastern spice-mixture of thyme, sumac and sesame seeds. If you don’t have za’atar you can use any spice mixture that you like.

Preparation time: 15 minutes

Ingredients:

1 lb (450gr) Halibut -1.5in (4cm) thick
2 tbsp oil
3 tbsp za’atar
Salt and pepper

Preparation:

Turn oven on Broil

Use a wide flat baking pan. You can use parchment paper to place the fish on, this makes clean-up easier.

Cover fish on both sides with oil


Sprinkle salt and pepper on top


Cover top with a layer of za’atar


Broil for 5-7 minutes
 
Turn oven off and leave fish in the oven for another 5 minutes


Serve with your favorite side dish/es.
