Easy Lamb Stuffed Mushrooms Recipe



This is a quick and easy recipe with mouth-watering results. Take a bite and let your taste buds take you places, beyond your physical confinement. Sit in the balcony watching over the Mediterranean. Enjoy the warmth of the sun and the caressing of the wind on your bare skin. Life is good and delicious:)  


Ingredients:


18 mushrooms, stem removed (I used a box of Shiitake mushrooms from Costco)

Lamb staffing:
1 lb (500gr) ground lamb
1/3 cup chopped shallot (about 1 large shallot)
1/3 cup chopped pitted kalamata olives
2 tbsp chopped parsley
¼ cup olive juice
1 tbsp liquid amino
1 tsp garlic powder
½ tsp cumin powder
Salt and pepper


Preparation:

Preheat oven to 350 degrees F (175 degrees C). 

Clean mushrooms with a damp paper towel and place them in a baking pan, cavity side up.

Mix together all lamb stuffing ingredients.

Spoon the filling into the mushroom cavities, creating generous hills of meat on top.

Bake for 25 minutes in the preheated oven, or until liquid starts to form under the mushrooms.

- Tahini drizzle
- A salad made of chopped tomatoes, shallot, and parsley, dressed with lemon juice, olive oil, and salt and pepper
